Natural Process 10 to 12 percent cocoa butter cocoa powder. For 1 square baking chocolate, use 3 Tbsp cocoa powder, plus 1 Tbsp shortening or oil.
Chocolate Butter Cream Frosting: 1/2 cup Cocoa Powder, 4-5 Tbsp Milk, 2 2/3 cup Confectioners Sugar, 1 tsp vanilla, 6 Tbsp Butter or Margarine, then combine cocoa and sugar. Cream butter with 1/2 cup of cocoa mixture in small bowl. Add remaining cocoa mixture alternately with milk, beating the mixture until it reaches a spreading consistency. Blend in vanilla.
Hot Cocoa Mix: 2 cup Dry Milk Powder, 2 Tbsp Cocoa Powder, 7/8 cup Confectioners Sugar, 7 Tbsp Non Dairy Creamer. Thoroughly combine. Store in an airtight container. Place 1/3 cup cocoa mix in mug, and add 3/4 cup boiling water. Sit back and enjoy!
