General Herb Information

An herb garden without dill is like a car without wheels. Dill's versatile culinary use and easy culture make it the perfect herb for the beginning herb gardener and a favorite of die-hard enthusiasts.

A. graveolens is a hardy annual native to Southwest Asia and Southeast Europe. It is also naturalized in some parts of North America. It grows from two to four feet high, though `Bouquet,' a dwarf form, is bushier and may be 1 1/2 to 2 feet tall. The stems are smooth, ribbed, hollow and have a bluish-green cast. The finely divided linear leaves envelop the stem with a thin sheath. The tiny yellow flowers grow on terminal umbels up to eight inches across. The flattened fruits have prominent ribs and are about one-eighth of an inch long. Dill has a carrot-like tap root.

Dill is easily grown from seed sown in early spring. Make successive plantings every three weeks from May through the first of August to insure a fresh supply of leaves for picking. Seeds germinate in ten to fourteen days and should be sown to a depth of one-fourth inch. Seedlings grow well thinned to eight to twelve inch spacings. Four to eight pounds of seed will sow an acre, depending upon the planting scheme used. A ready market can be found for fresh dill stalks in most urban areas, making dill a good supplemental cash crop for a family garden. A fifty-foot row will provide a child with some extra spending money for summer vacation.

Dill thrives best in a moderately rich. moist, slightly acid (5 to 7 pH) soil. under full sun. It will tolerate some shade especially in the South.

In a rich garden soil, dill self-sows in abundance. Plants produce seed about eight weeks after planting. An acre may yield 400 to 700 pounds of both seed and leaves or dill "weed?"

Dill leaves are harvested just before the plant comes into bloom. Seeds can be harvested as soon as the tips begin to turn light-brown. Dill weed should be carefully spread to dry at a temperature of 90°F. When hung to dry without temperature regulation, dill often turns an undesirable brown color.

Dill leaves and dried seeds were used for flavouring vinegars and cooked dishes, particularly fish. The leaves were added to salads and sauces, or used as a garnish. The herb was also used as pickling spice for cucumbers and gherkins. The seed is more pungent than the leaves.

Miscellaneous

A native of southern Europe and the eastern Mediterranean, dill was probably introduced into Britain by the Romans, and was listed by Aelfric. Its name is derived from the Norse dilla, or the Anglo-Saxon dylle, both meaning to lull, or soothe. During the Middle Ages the herb was added to love potions and to witches spells, or hung up in a house as protection against the "evil eye". It was also used to perfume soap and cosmetics.

The plant originates from southern Europe and western Asia, and its use is recorded far back in time. As with so many umbellifers, this hardy annual yields two separate culinary components, its seeds and its feathery leaves, which are, somewhat ambiguously known as dill weed.

History

The herb was used for health benefits by health practitioners in both ancient Egypt and Rome; indeed it was the Romans who introduced it to northern Europe. After centuries in obscurity, it surfaced again in medieval times, when its use was widespread, particularly in Scandinavian countries like Norway and Sweden.

Characteristics

Dill grows to a height of 30 inches, with a spread of 12 inches. The green stem, which is hollow and smooth, branches out at the top and carries large flat umbellifers of bright yellow flowers that bloom in midsummer. The leaves are ultra-fine, feathery, and dark green, and have a taste similar to that of parsley. The flat, oval seeds are parchment-colored, and have a rather bitter flavor.

Growing Tips

The plant is easy to grow from seed sown in late spring or early summer. It favors poor, well-drained soil and a sunny position and, since it does not transplant well, should be sown where it is to grow. If the plant is sited close to fennel, cross pollination is possible.

How to Use

The fresh leaves are used in salads, fish dishes, and sauces to serve with fish.

Taken as dill water (gripe water) 1 to 2 teaspoons is normally sufficient to release trapped wind.
